Late manual harvest with grape selection. The grapes from the three varieties are de-stemmed and pressed together. Fermentation takes place with maceration of the skins for several days in stainless steel containers. Various pump overs follow in order to extract colour, aromas and flavours from the skins of the three varieties.
If aged, it is a classy wine that goes well with white and red meat, game, aged cheeses and spicy cured meats.
