Manual harvest in boxes followed by drying in a ventilated room for vinification. Fermentation takes place with maceration of the skins for several days in stainless steel containers. Various pump overs follow in order to extract colour, aromas and flavours from the skins.
Classic dessert wine, to be combined with dry pastries, walnut and chocolate cakes. Also to be tried with aged cheeses.
